Aceto Balsamico del Duca represents the experience of five generations, employing original family recipes, handed down from father to son. With constant dedication, it produces an excellence with an inimitable taste, appreciated all over the world.
Aceto Balsamico del Duca is history: it is confirmed by the entry into the register of the Modena Chamber of Commerce and Industry in 1891.
In that year, Adriano Grosoli opened “Premiata Salumeria Grosoli”, a delicatessen, and started selling self-produced specialties: cured meats, sausages, cheeses, Lambrusco wine, and Balsamic Vinegar.
Since the beginning, the company distinguished itself by the quality of its products that was already recognized in February 1927, during the International Exhibition in Genoa, when Adriano Grosoli’s enterprise was awarded with “The Diploma of Grand Prix and Gold Medal for the special processing of traditional products”.
Over time, Adriano was succeeded by his son Mario, who continued with the same passion as his father to lead the family bottega, making it a point of reference for the bourgeoisie of Modena. In 1972, Mario left the command to his son Adriano who, since 1974, has decided to dedicate himself exclusively to the production of Balsamic Vinegar of Modena.
Together with his wife Luciana, he decided to mark the product with the image of Duke Francesco I d’Este, one of the most famous and passionate producers of that balm which was extremely appreciated by the Este family.
Since the 1980s, the daughter Mariangela has been in charge of the management of the firm and, over time, the company has expanded, increasing in prestige and entering new international markets.
Today, the historic site of Via Medicine 2340 in Spilamberto, is dedicated to the ageing of the precious Traditional Balsamic Vinegar of Modena and preserves hundreds of precious small barrels. Consisting of an ancient brick-kiln built approximately in 1600, it has recently been renovated and made available to the many visitors who wish to discover the secrets of this unique product.

This site often hosts many cultural and recreational events, in the evocative setting of the ancient barrels, still in full operation.
In 1992, a new plant was inaugurated, further enlarged between 2004 and 2008. It includes a functional office building and visitor reception and a modern shop for direct sales, in a work context designed and built for the worker. Inside the new site, there are the big oak casks, where the Balsamic Vinegar of Modena matures, and the different production lines.
Over time, Aceto Balsamico del Duca has positioned itself at the top of quality Balsamic production, proposing eco-friendly products, such as the Organic line, with various proposals, and emphasizing the strong link to the land of origin, with “Solo Modena” line. This short supply chain product, obtained entirely from grapes from the province of Modena, was the winner of the “2009 – 2010 Corporate Social Responsibility Award” of the Province of Modena.
Aceto Balsamico del Duca is synonymous with quality and elegance and represents the city of Modena and its territory worldwide at the major international fairs.
However, it is a historical reality that is continually renewed; the Quality Certifications that the company has been committed to maintaining and the development of new products, designed to meet the demands of an increasingly demanding consumer, are evidence of this.
After 120 years since the founding, the idea of making the shop, from which the great history of the family began, revive started to take hold: “La Bottega di Adriano Grosoli”, which today is presented in a modern way, with the possibility of online purchases. In 2016, Aceto del Duca reached a double goal: on the occasion of its 125th anniversary, it entered the register of the Italian Centenary Companies Association. Remaining faithful to the tradition, and opening itself to new qualitative challenges, the company proposes always a Balsamic Vinegar of Modena, “At the top of flavor”.

IFS Certification
The IFS Standard (International Food Standard) is related to food safety and is recognized by the Global Food Safety Initiative (GFSI), an international initiative, whose main purpose is to strengthen and promote food safety along the entire supply chain. IFS is in the meantime standard of safety and quality of food products.
Certified quality
Aceto Balsamico del Duca is among the first companies to have obtained recognition and registration for the processing and packaging of Aceto Balsamico di Modena P.G.I. (Protected Geographical Indication), pursuant to the DPC030 and according to the standards of the P.G.I. Regulation (Reg. EC 583/2009), of which the Ministry of Agricultural Food, Forestry and Tourism Policies is the guarantor.
In 2000, the Traditional Balsamic Vinegar of Modena obtained the coveted P.D.O. (Protected Designation of Origin) and Aceto Balsamico del Duca has obtained the certification of its production according to the Reg. EC 813/2000.
Certification of Organic Product
Since 1995, Aceto Balsamico del Duca has obtained the organic product certification according to European, Canadian, US and Japanese standards, and, therefore, it boasts the international symbols.
Halal Certification
From 2019, Aceto Balsamico di Modena P.G.I. and Traditional Balsamic Vinegar of Modena P.D.O. are certified as Halal (lawful), as they are produced according to Shari’ah and following completely traceable production supply chain.
Product quality
Aceto Balsamico del Duca offers a unique product, thanks to the use of:
• cooked grape must of Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni grapes processed in the area of origin;
• exclusively Italian wine vinegar;
• raw materials from non-genetically modified grapes (no GMOs) and with a very low content of sulphite.
Production and bottling take place in the area of origin, i.e. in the province of Modena.
